Celebrate St. Patrick’s Day in Style

February 4, 2016 – March 17 is the day when everyone is Irish. Besides corn beef and cabbage and Irish soda bread, it’s a great day for a drink or two to celebrate all the delightful things and people in our lives from the Emerald Isle.
We checked our sources and have come up with six cocktails dedicated to St. Patrick’s Day. Since it falls on a Thursday this year, we selected cocktails that won’t require too much labor if you are hosting a few friends. And you’ve got two weekends to pull it all together and try out the recipes. You’ll be a pro by the time March 17 rolls around.
The Irish are famous for their poetic blessings and this one is especially appropriate for the drinking class, especially if someone is driving.

I-RISH UPON A BAR
2 diced, skinned chunks of Cucumber
2 diced, skinned chunks of Kiwi
Small sprig of Fresh Dill
1 part Bombay Sapphire Gin
Drizzle Elderflower Cordial
Drizzle of Fresh Lime
Muddle first 3 ingredients in base of cocktail shaker. Add Sapphire and remaining ingredients with large scoop of ice. Shake vigorously, then double strain into a chilled glass.
LUCKY LEPRECHAUN
2 oz. Caliche Rum
¾ oz. Melon Liqueur
¾ oz. Lemon Juice
½ oz. Triple Sec
3 dashes Mint Bitters
Combine all ingredients in a cocktail shaker, fill with ice until well chilled. Serve in a coupe glass.
POT o’ GOLD
1 part Bombay Sapphire Gin
½ part Limoncello
1 heaped barspoon of lemon curd
Place ingredients in a shaker filled with ice. Shake vigorously then pour into a chilled martini glass. Garnish with a sprig of fresh mint.
SHAMROCK SHANDY
1 part Bombay Sapphire Gin
3/4 part Lemon juice, freshly squeezed and filtered
½ part Simple syrup
1 bottle Belgian-style wheat beer
Mix first three ingredients in a beer goblet then top with beer.
LUCKYTINI
1 part Bombay Sapphire Gin
½ part Apple Schnapps
½ part Fresh Apple Juice
Squeeze of Fresh Lime
Pour ingredients into a shaker filled. With ice, shake thoroughly and strain into a chilled martini glass. Garnish with thin apple slice.
SHAMROCK SHAKEUP
1 1/2oz Caliche Rum
1 1/2 oz Pineapple juice
1 oz Orange juice
1/2 oz Lime juice
1/2 oz Velvet Falernum
Lime Wedge
In a cocktail shaker combine all ingredients, fill with ice and shake.
Strain over ice in a highball glass. Garnish with fresh lime wedge.
